I’ve decided to share my new drink recipe “Smoke”. The concept of this cocktail was birthed for a music/artist showcase I sponsored this past weekend with my team, “What We Do Events.” For our first event of the year, we decided to have a collaborative event that would showcase our brands. My partners Taylor and Quadi are in a band named VEnT, and they would provide the music, while I would provide the art via Smoked Cocktails.

Quick and Easy Poppyseed Chicken

Poppyseed chicken has been one of my most requested dishes by both kids and adults. When my kids were young, they had a lot of friends in the neighborhood and whenever they knew I was making poppyseed chicken, I would always wind up with a few extra friends at my dinner table. I have also had a few moms in the neighborhood ask me for the recipe.

Poppyseed chicken is one of those recipes that is so easy and affordable. You can prepare it the night before and then just toss the topping on and bake when you are ready.

I have used this dish for large parties because of how easy and affordable it is. Not to mention, I haven’t met one person that does not like it. It pairs well with potatoes and rice. I usually just serve a baked potato as my side because it’s so easy.

Tips

You can use chicken breast cut into chunks, but I personally think using rotisserie chicken makes it taste so much better. I also do not use store brand crackers. I only use Ritz crackers. I think it would be okay to use store brand soups instead of Campbells, but I do always use Campbells.

If you have any leftover (which usually doesn’t happen), I suggest heating it in the oven because the topping will be soggy if you heat it in the microwave.

Poppyseed Chicken

Ingredients

1 Rotisserie Chicken (cut into bite sized pieces) or 4 skinless, boneless chicken breast halves.

1 can cream of chicken soup

1 can cream of mushroom soup

1 8 0z. container of sour cream

1 sleeve Ritz crackers (crushed)

½ cup butter, melted

2 tbsp. poppyseeds

Directions

Combine the soups and sour cream. Add cut chicken and mix together. Spread in baking dish. Combine the melted butter, crushed crackers and poppyseeds in a bowl.  Spread cracker mixture over chicken. Bake at 350 degrees F for 25-30 minutes. Serves about 6.

Could mushroom powders really help people with Rheumatoid Arthritis?

I happened to stumble upon a blog about the health benefits of mushrooms and the fact that you can easily add mushroom powder to drinks.

As a Rheumatoid Arthritis sufferer, I got very excited about this news as I have yet to find a medication that reduces my inflammation, let alone something natural that you can just add to your food or drink. So I started to do a little research for myself.

What I found out was there are different kinds of mushroom powders and each have different benefits.

  • Chaga is used for preventing and fighting cancer, slowing the age process, lowering cholesterol and blood pressure, reducing inflammation and helping support the immune system.
  • Reishi is used for calm, relaxation and sleep. Lion’s mane is used for brain function and focus.
  • Cordyceps is used for performance, adaptogenic effects, and increased oxygen flow.

Since this sounds too good to be true, I decided to do some more research. The first powder I looked into was Chaga because my main concern was trying to reduce inflammation. I found that Chaga was usually well tolerated but there were some safety issues.

  • Chaga could interact with common medicines, causing potentially harmful effects such as impacting blood sugar for those that are on insulin.
  • Chaga also contains a protein that can prevent blood clotting.
  • Some research showed that Chaga may cause your immune system to become more active.
  • There is no research on the safety of Chaga for women who are pregnant or breastfeeding.

Despite the potential negative effects of mushroom powders, I still might want to try them. However, I would check with my doctor first. I look at this way – the side effects from rheumatoid medications can be far worse than the side effects of the mushroom powder.

The Easiest, Most Delicious Appetizer

Are you tired of the same old appetizers? Do you want to wow your family and friends with an appetizer that is sure to be a big hit? An appetizer that your family and friends will undoubtedly ask for over and over? Then this is the dip for you.

A true and funny story – “The one time I didn’t make the dip, my son said the party was ruined.”

I discovered this recipe when at a family gathering many years ago. My sister-in-law served this dip and I immediately asked for the recipe because it was so good. When I saw what was in the dip, I couldn’t believe it. You would never know there are only 3 ingredients.

So whether I am hosting an event, or bringing something, this is my go to recipe.  It is so quick and easy and not to mention, so delicious. I have never had one person say they didn’t like it.

What makes it even easier, is this dip can be made ahead of time. All you need to do is just bake it when you are ready. Since this is a warm dip, I like to keep it in a crockpot on the warm setting.

This dip used to be Aunt Karen’s, then Aunt Lynnie’s and now soon to be yours!
