Quick and Easy Poppyseed Chicken

Poppyseed chicken has been one of my most requested dishes by both kids and adults. When my kids were young, they had a lot of friends in the neighborhood and whenever they knew I was making poppyseed chicken, I would always wind up with a few extra friends at my dinner table. I have also had a few moms in the neighborhood ask me for the recipe.

Poppyseed chicken is one of those recipes that is so easy and affordable. You can prepare it the night before and then just toss the topping on and bake when you are ready.

I have used this dish for large parties because of how easy and affordable it is. Not to mention, I haven’t met one person that does not like it. It pairs well with potatoes and rice. I usually just serve a baked potato as my side because it’s so easy.

Tips

You can use chicken breast cut into chunks, but I personally think using rotisserie chicken makes it taste so much better. I also do not use store brand crackers. I only use Ritz crackers. I think it would be okay to use store brand soups instead of Campbells, but I do always use Campbells.

If you have any leftover (which usually doesn’t happen), I suggest heating it in the oven because the topping will be soggy if you heat it in the microwave.

Poppyseed Chicken

Ingredients

1 Rotisserie Chicken (cut into bite sized pieces) or 4 skinless, boneless chicken breast halves.

1 can cream of chicken soup

1 can cream of mushroom soup

1 8 0z. container of sour cream

1 sleeve Ritz crackers (crushed)

½ cup butter, melted

2 tbsp. poppyseeds

Directions

Combine the soups and sour cream. Add cut chicken and mix together. Spread in baking dish. Combine the melted butter, crushed crackers and poppyseeds in a bowl.  Spread cracker mixture over chicken. Bake at 350 degrees F for 25-30 minutes. Serves about 6.

  1. The “Poppy Seed Chicken” recipe looks delicious. Most often people eat out due to lack of time or intimidation of cooking at home. But based on the ingredients listed this is an easy simple recipe that everyone can make even a first time cooker.

    1. I think this recipe is perfect for those just starting to learn how to cook. This was one of the first recipes that my kids used when they first started cooking. The recipe is also great for experienced cooks when they just want to whip up something quick and easy. I hope you do try it because it really is good.
